Mistinguett Rebel is elaborated by the Charmat Method (second fermentation in stainless steel tanks). This process results in a fresh, elegant and pleasant sparkling wine and, in this case, with a low alcohol content: 8%. A normal sparkling wine has an average alcohol content of 12%.

Harvest: The harvest is carried out using a combination of manual and mechanical methods to ensure the highest quality of the grapes. Macabeo is harvested in early September, followed by Xarel·lo in mid-September, and finally Parellada in early October.
Fermentation: The process begins with a first fermentation in stainless steel tanks to produce a fresh and elegant wine. Afterward, the coupage is prepared, followed by partial dealcoholization. A second fermentation then takes place in stainless steel tanks, using the Charmat method. This process results in a sparkling wine that is fresh, elegant, and pleasant.
